Hola folks. I have not forgotten about you out there. Life right now consists of beautiful tropical rains on the Caribbean Coast of Mexico. D and I have been exploring our way down the beautiful and strange Costa Maya south of Cancun. Quintana Roo has an unusual mix of huge palacial resorts, wild areas of dense jungle, lots of tiny Mayan villages, and a mind-blowingly beautiful coastline. It's a lot to understand...and really a few days of poking through only gives me some glimpses at the complexities that lie beneath the surface here.
Food here has been incredible mix of all things tropical and light, breakfasts of mangos, bananas, papayas, and oranges followed by lunches and dinners of ceviche. I just can't get enough ceviche. Shrimp, octopus, and fish cured by limed juice served mixed tomatoes, onions, and habanero chiles. Amazing. I missed those tasty hot chiles!
I wanted to share a bit of what's going on but mainly explain that in the next bit of time before I move into my new house and life settles into it's new grooves I will be blogging more sporadically. I am collecting ideas and am excited to share them with you soon. Thanks for being out there....
